The Complete Italian Vegetarian Cookbook by Jack Bishop  –  I am always in the mood for Italian, and this never disappoints.  We make the butternut squash ravioli for my mom’s birthday every year.

The New Moosewood Cookbook by Mollie Katzen  –  As classic as classic gets.  This should be in everyone’s kitchen.  I’m sure it’s already in yours.

Gluten Free Baking Classics by Annalise G. Roberts  –  You usually can’t even tell the goods are gluten free!  Even the bread recipe is excellent.

Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz and Terry Hope Romero  –  Self-explanatory.  This got me through college.
